Acceptance: USD Mastercard works with more merchants worldwide. EUR Visa tends to work best with larger companies.
Usage: Both are digital and meant for online use. Both work with Apple Pay and Google Pay.
Delivery: Usually 15 minutes. Up to 2 hours at the outside.
Email: Used only to send your receipt and redemption link. It's your backup if you lose the tab, so use a real address.

No VPN, proxy or Tor when you redeem

That includes Brave Shields, uBlock and uMatrix. Providers block redemptions that look proxied, and a blocked code cannot be reissued.
